Monte Subasio is today a Regional Park: a network of trails connects Assisi to the Eremo delle Carceri — the hermitage where Francis retreated to pray, set into the mountain's rock — and continues towards the summit, at 1,290 metres. The landscape changes gradually along the way: from the dense woods near the Eremo, the trail climbs towards open high pastures, where the view stretches all the way to the Umbrian valley.
Subasio pecorino cheese
It's the mountain that gave its name to Subasio pecorino, still produced today by the flocks grazing at altitude. The same massif is also the natural source of the famous pink stone used to build much of Assisi — the stone that gives the town the colour visible from afar, especially at sunset.
